In this page, we introduce you "Nameraka (Smooth) Caramel Pudding". To cook this pudding, there is a little bit more process to take comparing to cooking mousse.
Besides, the heat will involve in this process, therefore please be careful when cook.

"Nameraka (Smooth) Caramel Pudding"
with "Whip Taste Caramel".

See below for its recipe.

"Nameraka (Smooth) Caramel Pudding" 4 Pieces (50g/piece)
Milk 100g
Fresh Cream (Milk fat 45%) 40g
Granulated Sugar 12g
Egg Yolk 30g
"Whip Taste Caramel" 22g
"Domestic Vanilla Oil", (or Domestic N. Vanilla) 0.2g

Mix egg yolk and granulated sugar and melt it until the granulated sugar is well dissolved.

Heat the mixture of milk and fresh cream up to 60 degree celsius, and put this heated mixture into the mixture of egg yolk and granulated sugar slowly and mix it well.

Add "Whip Taste Caramel" and mix it well

Add Domestic Vanilla Oil about 5 drops to the mixture and mix it well.

Strain the mixture with small mesh size straigner.

Fill the mixture into the container.
During this process, some bubbles are generated on the filled pudding. For beautiful finish, wipe off these bubbles by kitchen paper etc.

Wrap the top of the filled container by aluminum foil, and put it on the hot watered container.
Then put it into Oven to steam it at 140 to 150 degrees celsius around 40 minutes.
To find the timing of baking is complete is important.
When you joggle it lightly, the pudding is wavy, it is necessary to steam a bit longer.
However when you joggle it lightly, the pudding is waved elastically, now you can take this out of oven.
After this steaming process, put the pudding into the refrigerator to cool it down for 2 to 3 hours.
